Brioche dough
300g whole wheat flour
300g white flour
1 sachet of yeast
180g milk
90g butter
3 eggs
1 teaspoon sugar
1 teaspoon salt
Pea pesto
300g fresh peas
70g grated parmesan
1/2 garlic clove
50galmond powder
4 tablespoons olive oil
Salt
For the filling
2 red peppers
400g sausage (chicken/turkey)
For the covering
2 egg yolks
Some lemon drops
Mix the milk and yeast in a bowl until they are dissolved and then add 2 tablespoons of flour. Let for 5 minutes, add the salt, sugar and eggs and then mix well. Throw the rest of the flour in the mixture and knead well. Finally, add the butter and continue kneading until the dough is homogenized and malleable and let rest.
In the meantime, wash the peas and mash them in the multi mixer by simultaneously adding the almond, garlic, olive oil, salt and parmesan (add some water if needed), until a puree is created.
Continue by cutting the peppers into small pieces and the sausage in rondelles (medium thickness).
Divide the dough into small balls (approximately 20g) and spread them in a round shape with your hands or with a rolling pin.
Place the pea pesto in the center and spread the pepper pieces on top. Place the sausage and carefully close by creating a small ball. Put them in a pan with the closing facing downwards.
Spread the egg on top and let for another 10 minutes until they puff.
Bake in a preheated oven for 10-15 minutes in 180℃.
