For the dough
500g whole-wheat flour
320g warm water
2 ½ teaspoons yeast
1 ½ teaspoons brown sugar
1 ½ teaspoons salt
1 egg white for the spreading
Black sesame or poppy seed or chia seed for the sprinkling
For the avocado cream
3 mature avocados
1 lime (juice)
1 tablespoon olive oil
2 branches of coriander chopped into small pieces
Salt-pepper
Mix thewarm water and yeast together in a bowl until they are dissolved and then add 2 tablespoons of flour. Allow to rest for 5 minutes before you add the salt and sugar. Add the rest of the flour in the mixture and knead thoroughly.
Let the dough rest and rise for 20 minutes by covering it with a layer.
Cut the dough into even pieces (around 8-10) and then shape them into thick rings.
Let rise for another 15 minutes and then heat each one separately by dipping them in a pot of boiling water, for about 30 seconds. Finally, spread the egg white on each piece, then sprinkle with black sesame and bake them in a preheated oven for about 15 minutes in 200℃.
Meanwhile, peel the avocados and mash them by using a fork or a blender. Add the lime juice and olive oil, then season, stir with a spoon and finally flavor with the fresh coriander.
After they cool down, cut the bagels in half and fill them with avocado cream.
