For the tortillas
120g white flour
65g whole wheat flour
65g corn flour
125ml water
1 teaspoon salt
For the filling
250g ground beef
1 red Florina pepper chopped into thin slices
1 yellow pepper chopped intothin slices
1/2 green pepper chopped into thin slices
1/2 cup cauliflower chopped
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon oregano
Salt
Pepper
100g cream cheese
150g Graviera cheese
Sift the two types of flour in a bowl and place the water and salt. Knead until the dough becomes soft and it doesn’t stick in your hands (in such case, just add some extra flour).
Divide the dough into small balls and by using a rolling pin shape them into thin and round tortillas.
Place two frying pans on the cooking stoves, the one in a medium heat and the otherin a high heat.
Place each tortilla in a medium fire on both sides for about half a minute. Then place the tortilla in high heat, again for about half a minute, until itexpands and gets a brown color.
Sauté the ground beef in a frying pan with olive oil and mix well until golden brown. Add the peppers, cauliflower and spices, then season and mix well until the vegetables are cooked.
Remove the frying pan from the fire, add cream cheese and mix until homogenized.
Fill each tortilla with the mixture and spread the Graviera cheese on it. Fold in the middle and then heat once more in the frying pan or in a toaster until the cheese melts.
Finally, cut in half and serve.
